OK this is way more complicated than it should be! But I wanted to set the default colour for all my printing to black and white. Here’s how to do it.
Here’s how to do it:
You’ll see a screen of printers, pick your printer.
Then here select ‘Set default options’:
Then here set the options you want as the defaults:

Thanks for picking that up – Beeper Desktop is for Mac plus they have a phone version.
You don’t say if this Beeper app is for Mac or for iOS/iPadOS, and I can’t really tell by looking…

Like Rob, I’ve been following your blog for many years, but mine was a different reason.
My issue when I started following was the uncooperative mouse button/wheel on the white Apple mouse. Who would have thought that a blank, white A4 page could solve such a problem?!? (I still keep one of those mouses/mice(?) as an active backup to my Magic Mouse. I have both versions 1 and 2 of the MM.)
That mouse also is useful for my iPad Pro, so I do keep it around.
